There are two basic classifications of Vegetarian foods and diets.
Lacto Vegetarian
which is a type of diet that totally excludes meat, poultry, and sometimes fish, but permits eggs, milk, cheese, and sometimes butter.
Vegan
which does not permit fish or any dairy product. Vegetarians also prefer foods that are mainly unrefined (whole-grain cereals and wholemeal bread, for example). Vegetari an meals can be of a good gastronomic standard (there are some excellent vegetarian restaurants) and vegetarianism is compatible with a balanced diet, as the animal by-products provide the necessary proteins and enough calcium is present in milk and cheese. Moreover, the advantage of such a diet is that it is rich in unsaturated fats: it is universally recognized that an ex cess of saturated fatty acids, present in animal fats, may be harmful.
Accompaniments are the side dishes used to accompany a main meal or act as part of the plated meal itself and are mainly vegetable based.
