A round oily fish that is found in large shoals throughout the North Atlantic and the North Sea. Weighing in at around 300g the fish are sold whole or filleted and form an important part of the culinary culture of Northern European countries. Herring take strong flavoured ingredients well and are particularely good when cooked or marinated with acid flavours that counteract the rich, oily flesh. Herring can also be bought smoked (Arbroath smokies, Yarmouth bloaters and Manx kippers) or soused. |
