A highly prized fish that is common throughout the world. It has a silver blue/grey appearance with sharp fins and tough scales which need to be removed. The soft and delicate white flesh needs careful cooking so as not to become dry and over cooked, use wet cooking methods or high heat to seal the outsides. Sea bass take strong flavours well and are especially good with Asian herbs and spices.
