This is a large flat fish which is a member of the shark family and has a cartilaginous skeleton which is easy to remove. Usually only the large wings of skate are eaten as the body is very thin, although some useful nuggets of flesh are found and are commonly known as "skate nobs". The wings are sold without the skin and can be grilled, fried or poached.
